HI Briar... what a great project to start! Are you gutting the building and starting from scratch or renovating what is already there? Was it a general store beforehand? I'm not familiar with Lincolnville but if there is not a store in the area then "general" is great so that you meet the needs of your community. The more local products the better! Have fun!
